Why are students doing this/what are they getting out of it? 

Some problems have more than one possible solution. If there is a range of values that will work, an inequality may be the best representation of the answers. Since inequalities have more than one answer, it is important for students to visually understand that x=6 is different from x>6, which is why we graph it on a number line to show the many solutions.
